Cilantro Mayonnaise: Extraordinary & Simple
** Featured Sauce **
Our simple cilantro mayonnaise sauce is great for many dishes. Combine with pork tenderloin, sautéed or baked chicken, or toss with a salad. Consider adding chicken or salmon.Ingredients
3 ⁄4 cup mayonnaise
3 ⁄4 cup loosely packed cilantro leaf
1 tablespoon fresh lime juice
1 teaspoon soy sauce
1 garlic clove ++Steps
1. Put all ingredients except for mayonnaise in a blender.
2. Blend until smooth.
3. Remove from blender and stir in mayonnaise.Notes
If ingredients are too dry to mix well, add a spoonful of mayo but not more. Mayo is added last because it gets runny if mixed with all other ingredients. To avoid thinning the sauce, consider whisking in the balance of the mayo.++ Substitute 1 clove of garlic with 1/8 tsp of garlic powder or ½ tsp of garlic salt if you don’t have fresh garlic. Add garlic powder or garlic salt last to taste.

Spicy Provincial Sauce
In the spirit of our market, this is a simple, spicy version of a sauce that you can make with ingredients from our market. Our Simple Spicy Provincial Sauce (not to be confused with a traditional Italian Provençal sauce) can be made with fresh ingredients, canned ingredients, or a combination of both.Ingredients
1 - 15 oz Can of Diced Tomatoes/Diced Tomatoes & Peppers)
6 oz Fresh or Canned Salsa (Mild, Medium, or Hot)
1 Clove of Garlic (or 2 tsp Garlic Salt or Garlic Powder)
1-2 Jalapeño or Spicy Red Peppers (Optional)
1 tbsp of Butter or Olive Oil (If Using a Clove of Garlic)
1 Large Diced White Onion (or 1 tsp Onion Powder)
8 oz Sour Cream or Heavy Cream (Optional)
2-3 oz of White Wine or Cooking Sherry (Optional)
Salt, Ground Peppercorns, Thyme, Rosemary, or Other Seasoning as DesiredSteps
With Fresh Ingredients (Garlic & Onion)
1. Put butter or olive oil in a pan and heat to medium heat.
2. Chop or mince garlic and place in heated pan. Heat for 4-5 minutes. Once hot, stir frequently.
3. Dice the onion and peppers. Add to pan after garlic is lightly sautéed.Start With Canned Ingredients or Continue With Fresh Ingredients
4. Add the can of diced tomatoes and the salsa to a sauce pan.
5. Add salt, pepper, thyme, rosemary, or other seasoning as desired.
6. Add 6-8 oz of tomato paste to thicken the sauce
7. Simmer for 10-15 minutes.
8. Add 8 oz of sour cream or heavy cream to create a creamy texture.Notes

Harvest Zest Dressing
This simple dressing is a simple tangy, all natural dressing for any type of lettuce or salad. Also used with a cold, diced tomato and onion salad.Ingredients
2 tbsp Olive Oil
1 tbsp Apple Cider Vinegar
1 tsp Mayonnaise
1/2 tsp Dijon Mustard. Can Substitute Yellow Mustard
Basil
Pepper/SaltSteps
1. Whisk olive oil, apple cider vinegar, mayonnaise, and mustard together.
2. Add basil, salt, and pepper to taste.
3. Pour over any type of lettuce or salad.Notes
This dressing can be used on lettuce salads, tomato and onion salads, as well as a range of pasta salads that include tomatoes, onions, cucumbers, and more. -
Simple Garlic & Onion Cream Sauce (Michael)
Ingredients
6 Cloves Garlic (Can Substitute Garlic Salt or Garlic Powder)
8 Ounces of Finely Chopped Onion (White or Yellow Onion)
12 Ounces Sour Cream
1 Tbsp of Soy Sauce
2 Tbsps Butter or 1 Tbsp Oil (Olive Oil or Avocado Oil)
Pepper/SaltSteps
1. Chop onion finely
2. Mince garlic
3. Put butter (or olive oil or avocado oil) into sautée pan and set heat to medium/medium high.
4. Put chopped onions into pan. Cook onions until almost completely cooked (About 4-5 minutes). Stir frequently.
5. Add minced garlic to the pan. Continue to cook for another 2-3 minutes. Stir frequently.
6. Stir in sour cream and soy sauce into pan. 6. Reduce heat slightly and simmer for 6-8 minutes until all contents are blended.
7. Add salt and pepper to taste.
8. Pour over chicken or beef or mix with sautéed vegetables.
