  • Creamy Tortellini Soup

    This indulgent sausage tortellini soup is pure comfort in a bowl. It’s the kind of cozy, crave-worthy meal best enjoyed with a warm baguette for dipping.

    Ingredients

    2 tablespoons extra-virgin olive oil
    1 pound mild Italian pork sausage, casings removed
    ½ yellow onion, finely chopped
    3 garlic cloves, finely chopped
    1 tablespoon Italian seasoning herb blend
    1 (28-ounce) can crushed tomatoes
    6 cups chicken stock
    1½ teaspoons kosher salt
    ½ teaspoon freshly ground black pepper, plus more for serving
    9 ounces cheese tortellini
    1 cup heavy cream
    1 cup finely grated Parmigiano-Reggiano cheese, plus more for garnish
    2 tablespoons unsalted butter

    Steps

    1. Using 2 qt pot or larger. Add olive oil to the bottom and add your pork sausage. Brown
    2. Once browned, add your onion, garlic, Italian seasoning, tomatoes, stock, salt and pepper.
    3. Simmer for 5-10 mins.
    4. Stir occasionally.
    5. Add tortellini, heavy cream, cheese and butter, stir for 2 mins until pasta is cooked through.
    6. Serve and add desired salt, pepper, and cheese on top. Serve with a baguette.

  • Minestrone

    Classic Minestrone Soup

    This hearty minestrone soup is packed with tender vegetables, beans, and pasta simmered in a rich, herb-infused tomato broth. It’s comforting, nourishing, and perfect for a cozy meal any time of year.

    Ingredients

    2 tablespoons extra-virgin olive oil
    1 medium yellow onion, diced
    2 medium carrots, chopped
    2 celery ribs, thinly sliced
    1 teaspoon sea salt, plus more to taste
    Freshly ground black pepper
    3 garlic cloves, grated
    1 (28-ounce) can diced tomatoes
    1½ cups cooked white beans or kidney beans, drained and rinsed
    1 cup chopped green beans
    4 cups vegetable broth
    2 bay leaves
    1 teaspoon dried oregano
    1 teaspoon dried thyme
    ¾ cup small pasta that you have on hand
    ½ cup chopped fresh parsley

    Steps

    With Fresh Ingredients (Garlic & Onion)
    1. Put butter or olive oil in a pan and heat to medium heat.
    2. Chop or mince garlic and place in heated pan. Heat for 4-5 minutes. Once hot, stir frequently.
    3. Dice the onion and peppers. Add to pan after garlic is lightly sautéed.
    4. Add the can of diced tomatoes and the fresh ingredients to a sauce pan.
    5. Add salt, pepper, thyme, rosemary, or other seasoning as desired.
    6. Add 6-8 oz of tomato paste to thicken the sauce
    7. Simmer for 10-15 minutes.
    8. Add 8 oz of sour cream or heavy cream to create a creamy texture.

  • Stuffed pepper soup

    Stuffed Pepper Soup

    Stuffed pepper soup delivers all the classic flavors of stuffed peppers savory ground meat, sweet bell peppers, rice, and tomatoes simmered together in a rich, comforting broth. It’s a hearty, satisfying soup that tastes like comfort in every spoonful.

    Ingredients

    1 pound ground beef, chicken or turkey
    1 small onion, diced
    1 large bell pepper, diced
    29 ounce can diced tomatoes
    10 ounce can tomato soup (or tomato sauce)
    14 ounce can chicken broth (or beef broth)
    2 cups cooked rice
    1 teaspoon garlic powder
    salt and pepper, to taste
    shredded cheddar cheese to top

    Steps

    1. In a large pot, brown and crumble 1 pound ground beef along with 1 small onion, diced and 1 large bell pepper, diced over medium-high heat.
    2. When meat is thoroughly cooked, drain excess grease from beef mixture. Put beef mixture back into the pot.
    3. Add in 29 ounce can diced tomatoes, 10 ounce can tomato soup and 14 ounce can chicken broth.
    4. Give it all a good stir. Then add in 2 cups cooked rice. Stir again.
    5. Then stir in 1 teaspoon garlic powder and salt and pepper, to taste.
    6. Cover and let soup simmer on low heat for about 30 minutes to let all the flavors blend. (The longer it simmers, the thicker it will get.)
    7. Serve with shredded cheddar cheese on top of each serving.
